Ube Crinkle Cookies

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup dark brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1/2 cup ube halaya jam
  • 1 tablespoon ube extract
  • 3 drops violet food coloring (optional)
  • 3/4 cup powdered sugar (slightly different amount listed in zine)

Instructions

  • Mix dry ingredients together in a small bowl; set aside.
  • Cream butter, dark brown sugar and white sugar until smooth. Mix in egg and beat for additional 4-5 minutes.
  • Add ube jam, extract and food coloring (if using).
  • Slowly mix in dry ingredients.
  • Refrigerate dough for at least 4 hours or overnight.
  • Preheat oven to 325 degrees Fahrenheit.
  • Roll dough into 1 tablespoon-sized balls and into powdered sugar. Make sure to roll in powdered sugar twice for heavy coverage.
  • Bake in preheated oven for 10-12 minutes.
